Recipe:
– 800g of potatoes
– 300g of leeks
– 1 red sweet pepper
– 2 L-sized eggs
– 180g of sour cream
– 80ml of oil
– 100g of flour
– 1 baking powder
– 1 teaspoon of salt
– 1 teaspoon of garlic powder
– 1 teaspoon of thyme (optional)
– Ground pepper to taste

Procedure:
1) Peel and grate the potatoes on a coarse grater. Add salt so that the potatoes release excess liquid more easily and quickly. Let’s put it aside.
2) Beat the eggs with a whisk and add the sour cream. Stir to combine. Add oil and spices.
3) Cut the leek and red pepper into cubes. Add to the egg mixture. Drain the potatoes and add them too. We mix everything so that it is well combined.
4) Mix the flour and baking powder and add to the pie mixture. Add pepper to taste. Mix gently from the bottom of the bowl upwards.
5) A 25cm diameter baking dish lined with baking paper. Pour the dough into the mold and bake in a preheated oven at 190°C (374°F) for about 50 minutes.
