Pancake Cake
Pancake Cake is a fun and delicious dessert that combines the fluffiness of pancakes with the layers of a traditional cake. Perfect for breakfast or dessert.
Cherries went perfectly with this one recipe, which because of the combination sweet and sour taste, which is because of the wonderful color contrast that completed the beauty these cakes.

Pancake mix:
3 eggs
A teaspoon of vanilla flavoring
A pinch of salt
100 g of sugar
4 tablespoons of cocoa powder
4 tablespoons of oil
220 grams of flour
600 ml of milk
Cherry fil:
300 g of cherries
1 vanilla sugar
120 g of sugar
30 g of starch (corn starch)
4-5 tablespoons of cold water
White filling:
500 g of cheese (mascarpone or cream cheese)
120g of powdered sugar
300 ml of sweet cream
Chocolate ganache for the topping:
150 grams of dark chocolate
120 ml of sweet cream
Cherries for decoration
Procedure:
1) First, let’s make the pancake mix. Beat the eggs with sugar, vanilla flavoring and a pinch of salt. Beat with a mixer until foamy. Add oil, cocoa powder, flour and beat until all lumps disappear. At the end we gradually add milk.

2) Heat cherries, vanilla sugar and sugar until boiling, stirring occasionally. When it boils, add the thickened mixture with a little water and stir until the mixture thickens
3) Beat mascarpone and powdered sugar with a mixer until combined. Gradually add the sweet cream and beat with a mixer until the mixture becomes solid.
4) Line a mold with a diameter of 24×14 with transparent foil and cover the bottom and sides of the mold with pancakes. Spread with a layer of white filling.
Spread the white filling over the entire surface of the pancakes. Place the cherry filling at the beginning of the pancake and roll it up. Place three stuffed pancakes in a row. A layer of white filling goes over them, then again a row of stuffed pancakes. Finish the filling with white filling, fold the bottom pancakes and place two pancakes on top. Wrap with foil and leave in the fridge overnight
5) Take the cake out of the mold and cover it with sweet cream and dark chocolate ganache. Decorate the cake with cherries as desired
