Recipe for a delicious pie with olives and feta cheese, full of the smell and taste of the Mediterranean. Simple and easy to make with readily available ingredients, this pie is my go-to for a quick, low-fuss dinner or breakfast. Served with a cup of yogurt, every bite takes us on a journey.
Soft, airy, full of cheese and olives with a wonderful aroma of oregano and olive oil.

All measurements are per cup. My cup is 180ml. Yours can be of different volume, it is important that you measure everything with the same cup.

Recipe
– 3 eggs
– 1 cup of yogurt
– 4 tablespoons of olive oil
– 1 teaspoon of oregano
– 1 cup of carbonated mineral water
– 250g of feta cheese
– 100g of pitted green olives
– 100g of pitted black olives
– 1 teaspoon of salt
– 1.5 cups of cornmeal or polenta
– 1.5 cups of wheat flour
– 1 baking powder

Procedure👇
Beat the eggs with a wire until they foam a little. Add yogurt, oil and oregano. Stir to combine all the ingredients. Add carbonated water, feta cheese and olives cut into rings. Depending on the saltiness of the cheese and olives, add salt. I added a level teaspoon of salt. At the end, add corn grits (I had polenta), wheat flour and baking powder. Mix until all ingredients are combined and lumps of flour disappear.
Cover the 28×18 mold with baking paper. We pour the pie mixture into the mold and level it.

Bake at 180°C (356°F) for about 40 minutes.
Serve warm with yogurt or kefir
