Today I’m sharing with you another fantastic melt-in-your-mouth apple pie recipe. This time it’s a lean pie filled with filling made of apples, raisins, walnuts and apricot jam with the addition of rum and cinnamon 👌 In addition to being delicious, this pie also looks beautiful, so everyone will be asking you for the recipe just like me 👌

Ingredients for shortcrust pastry👇
400g of flour
1 baking powder
100g of sugar
A pinch of salt
1 teaspoon of vanilla flavoring
200g of margarine
Grated rind of 1 lemon
Juice of 1 lemon
80ml of cold water

Apple filling👇
4 large apples (about 800g)
Juice of 1 lemon
1 teaspoon of cinnamon
1 teaspoon of rum
80g of raisins
80g of chopped walnuts
3 large spoons of apricot jam
A little oil and almond leaves
Powdered sugar for decoration

Procedure👇
1) First we make the short dough.
Sift flour into a bowl to which we have added baking powder. Add sugar, a pinch of salt, vanilla flavoring and margarine. Knead with your hands to mix all the ingredients.
Add the juice and zest of 1 lemon and a little cold water. We knead until we get a smooth dough.

2) Divide the dough into two equal parts, wrap it in cling film and leave it in the fridge for half an hour.
After half an hour, take out one part of the dough, roll it out to about 1 cm thick and transfer it to a baking mold with a diameter of 26 cm. Remove the excess dough and press the edges against the mold

3) Wash and peel four apples. Divide them into quarters and remove the seeds. Cut them into cubes. Pour lemon juice over apples, add cinnamon, rum, raisins, walnuts and finally apricot jam. I don’t add sugar because it’s sweet even without it. Mix everything well and combine. We transfer it over the dough in the mold and flatten it

5) Separate the second part of the dough, trim the excess, cut it into 8 equal parts and transfer it over the apple filling. We connect the cut parts of the dough two by two so that we get the appearance of a flower

6) Coat the pie with oil and sprinkle with almond leaves. Bake at 180°C (356°F) for about 40 minutes.
Dust the baked pie with powdered sugar before serving.
