Apricot Cake

Apricot Cake. It’s apricot season and today I’m making my favorite cake with this delicious fruit. Soft, juicy, refreshing, and easy and simple to prepare.
Ripe, fragrant and juicy apricot fruits give a special aroma to this cake.

Necessary food items:
– 4 eggs
– 200g of sugar
– 10g of vanilla sugar
– 100g of butter
– 150g of Greek yogurt
– 250g of flour
– 1 baking powder
– 2 spoons of prezli (bread crumbs)
– about 400g of apricots


Let’s separate the yolks from the whites. Leave the egg white aside. Add sugar and vanilla sugar to the egg yolks and beat with a mixer until the mixture becomes creamy.

Then we add butter and yogurt and then flour with baking powder. At the end, we add bread crumbs, which will give the biscuit a special airy structure.
We beat the egg white into stiff snow and add it to the previously prepared mixture. Mix carefully so that it remains airy. Pour into a 28x18cm mold
Wash the apricots, dry them and cut them in half. Arrange on the surface of the biscuit.
Bake at 180°C (356°F) for about 35 – 40 minutes
