Best Blueberry Pie

Best Blueberry Pie.
An interesting and very tasty pie.

The combination of fine shortcrust pastry that melts in your mouth and blueberry cream is a winning combination for all our senses.

Ingredients needed for the dough:
– 300g of flour
– 150g of butter
– 100g of sugar
– 2 eggs
– 1/2 baking powder
– 1 teaspoon of vanilla flavoring
– Pinch of salt

Phil:
– 300g of blueberries
– 100g of sugar
– 100ml of water
– 30g of vanilla pudding powder
(optional cornstarch)

And more :
– About 200g of fresh blueberries
– Powdered sugar for decoration

Knead a short dough of flour, butter, sugar, eggs, baking powder, vanilla and a little salt. Knead until it stops sticking to your hands. Then we separate 1/3 of the dough, shape it into two balls, wrap them in transparent foil and leave them in the refrigerator for about 1 hour.

During this time we prepare the filling.
We put the blueberries in a pot on the stove, add water and sugar and wait for it to boil. Mix the pudding powder with a little water and add to the blueberries to thicken. Cook for a few minutes and let it cool.

We take most of the dough from the fridge and roll it out with a rolling pin to 1 cm thickness. Transfer it to a baking dish. Mine is round and 25cm in diameter.
Flatten the dough, lift and press the edges against the walls of the mold and remove excess dough. Prick the dough with a fork so that it rises evenly.
We also take a smaller part of the dough, roll it out to the same thickness of 1 cm, cut strips about 2 cm wide and fold each strip and arrange it in three concentric circles.

Fill the pie between the circles of dough with filling, and then arrange fresh blueberries on top.
Our pie is ready for the oven. Bake it in a preheated oven at 180°C (356°F) for about 35 minutes.

Wait for the pie to cool completely and the filling to set before removing it from the mold and cutting it.
Sprinkle with powdered sugar before serving.
