Caramel Peach Upside-Down Cake. An extremely beautiful, tasty, juicy and refreshing cake. It is an upside-down cake with peaches and caramel topping. The combination of refreshing, slightly sour peaches and sweet caramel will awaken all your senses.

Sponge dough:
– 2 eggs
– 140g of sugar
– 1 vanilla sugar
– 100g of butter
– 100ml of yogurt
– 250g of flour
– 1 baking powder
– a pinch of salt

Caramel:
– 120g of sugar
– 60ml of water
– 50g of butter

And 3 more bigger peaches (about 400-500g)

Procedure:
First, we will wash and dry the peaches. Then we take out the seeds and cut them into thin slices.
Arrange the peach slices in a 25 cm diameter baking dish lined with parchment paper.

We move on to making the caramel topping.
Melt the sugar over low heat and when it caramelizes and gets a nice color, add the butter. When everything is combined, pour over the peaches.

We make biscuit dough by separating the yolks from the whites.
First, we will whip the egg whites with the addition of a little salt into stiff peaks.
Add sugar and vanilla sugar to the egg yolks and beat until foamy.
Add butter and mix until all ingredients are uniform.
Add baking powder to the flour and sift into the dough.
Stir to combine the flour with the other ingredients.
Add the yogurt and finally the beaten egg whites, part by part, and mix gently so that the mixture remains airy.
Pour the mixture over the peaches, flatten and bake at 180°C (360°F) for about 35-40 minutes
Turn the baked and cooled cake onto the serving tray so that the bottom is on top.
