Ingredients for the dough:
4 eggs
1 tablespoon of rum
100g of sugar
100g of butter
100g of dark chocolate (min. 70% cocoa)
150g of roasted hazelnuts
2 spoons of cocoa
1 baking powder
A pinch of salt
1 vanilla sugar
3 oranges
Ganache:
200 ml of sweet cream
200g of dark chocolate with 70% cocoa

Procedure:
1) Separate the yolks from the whites. Leave the egg whites aside and add the rum aroma and sugar to the egg yolks.
Beat with a mixer until the mixture becomes foamy.
2) Melt the butter and chocolate over low heat
3) Let the butter and chocolate cool, then add to the beaten egg yolks and mix until the mixture is even.
4) Add ground hazelnuts, cocoa and baking powder to the cake mixture and mix carefully
5) Add a pinch of salt and vanilla sugar to the egg whites. Beat with a mixer until the snow becomes solid
6) Add the egg white gradually to the black mixture and mix slowly so that the biscuit remains airy.
7) Peel the oranges and separate the slices. Line a 24 cm diameter mold with baking paper and coat with butter. Arrange the orange slices in a circle.
We pour the dough over it and level it.
8) Bake the cake in a heated oven at 180°C (356°F) for about 40 minutes
9) While the cake is cooling, make the ganache.
Melt 200 g of dark chocolate in 200 ml of hot sweet cream
10) Transfer the cake to a serving plate so that the oranges are on top. We put a ring of mold around it and pour ganache over it. Let’s leave the cake in the fridge for a couple of hours so that the ganache hardens.
11) Remove the ring from the mold, decorate the cake as desired and it is ready for tasting.
