Favorite Plum Pie

Favorite Plum Pie. It’s very much plum season, so today I’m making my favorite shortbread pie with this delicious and refreshing fruit.

Ingredients needed for the dough:
– 250g of flour
– 125g of butter
– 100g of sugar
– 2 eggs
– 1 baking powder
– 1 vanilla sugar
– Pinch of salt

For the filling:
– 800g of plums
– 2 spoons of semolina
– 1 teaspoon of cinnamon

For the crumbs:
– 100g of flour
– 80g of sugar
– 1 vanilla sugar
– 50g of butter
– Pinch of salt

And more:
– Almond leaves
– 1 egg yolk
– 1 spoon of milk

First, we will knead the short dough from ingredients for the dough. Knead it until it stops sticking to your hands. Then we set aside 1/4 for decoration and shape it into two balls, which we wrap in transparent foil and leave in the refrigerator for half an hour.

During this time we will prepare the plums. Wash them, dry them with a towel and separate them from the seeds.

Now we make a crumbly dough from flour, sugar, butter with the addition of a pinch of salt and a little vanilla or vanilla sugar. No baking powder goes into this dough because it doesn’t need to rise.

We take most of the dough from the refrigerator and roll it out with a rolling pin, then transfer it to the baking mold. Mine is round and 25cm in diameter. Flatten the dough, lift and press the edges against the walls of the mold and remove the excess dough. Prick the dough with a fork so that it rises evenly.
Arrange the plum halves in a circle on the dough and sprinkle them with semolina and cinnamon (optional).
Now sprinkle the plums with the crumbly dough, and place the almond leaves on top.

Cut 1cm wide strips from the remaining dough and weave 2 braids for decoration. Place the braids along the edge of the mold, put them together nicely and coat them with egg yolk mixed with a spoonful of milk.

Our pie is ready for the oven. Bake it in a preheated oven at 180°C (356°F) for about 40 minutes
