Greek Zucchini Pie (Kolokithopita)

Greek Zucchini Pie (Kolokithopita). An interesting pie with zucchini that will delight you with its ease of preparation and even more with its fantastic taste. Pie is great for breakfast or a snack and very filling. It is easy to prepare from ingredients available to everyone, and even beginners in cooking will succeed from the first time.

Necessary food items:
– 300g of finished crusts
– 1 zucchini, 200g
– 100g of sausage
– 100g of edam cheese in slices
– 150g of feta cheese
– Dried oregano and basil
– 3 eggs
– 1 teaspoon of salt
– 1 teaspoon of baking powder
– 50ml of olive oil
– 500ml of yogurt

We fold the crusts like a fan and arrange them in a 25x15cm mold until we use them all. Arrange thin slices of zucchini, slices of sausage and slices of cheese between the crusts. Crumble feta cheese on top and sprinkle with oregano and basil.
Now we make the filling from eggs, olive oil, yogurt with the addition of salt and baking powder.
Pour the crusts with the prepared filling and let it stand until the oven heats up.
Bake at 180°C (365°F) for about 45 minutes.
