Lenten Apple Cake

Ingredients for the dough:
We don’t need a mixer or a scale for this cake. Everything is measured with a 200ml cup
– 2 apples
– 1 cup of sugar
– 1 vanilla sugar
– 1 teaspoon of cinnamon
– 1 cup semolina
– 1 cup chopped walnuts
– 1 cup of flour
– 1/2 teaspoon of baking soda
– 1 teaspoon of rum flavoring
– 3 tablespoons of apricot jam
– 1/2 cup oil
– 1 cup of carbonated mineral water

Ingredients for the glaze:
– 3 tablespoons of apricot jam
– 100g of dark chocolate
– 3 spoons of oil

To decorate:
– Pomegranate pits

Procedure:
Peel and grate the apples. Put them in a mixing bowl. Add sugar, vanilla sugar and cinnamon. Add semolina, walnuts, flour, baking soda in order. Mix all the dry ingredients.
We add the wet ingredients: rum flavor, apricot jam, oil and carbonated mineral water.
Mix with a blender to combine all the ingredients.

Line a 25cm diameter mold with baking paper.
Pour the dough into the mold, flatten and bake at 180°C (356°F) for about 40 minutes.

While the baked cake is still warm, spread apricot jam.

Prepare the glaze by melting the chocolate with oil and pouring it over the cooled cake. Wait for the glaze to harden, then decorate as desired and serve 😋
