Meat filling:
500g of ground beef
300g of leeks
2 tablespoons of oil
1 teaspoon of salt
1/2 teaspoon pepper
1 teaspoon thyme (optional)
Stuffing:
3 eggs
A pinch of salt
80ml of oil
180 ml of carbonated mineral water
180 ml of yogurt
3 spoons of semolina
And more:
-500g of thin pie crusts
Procedure:
1.) Fry the meat in a little oil, add diced leeks. Season and fry for 10-15 minutes.
Let it cool while we whip the filling
2.) Beat the eggs until foamy with a little salt, add oil, carbonated water, yogurt and semolina. Stir to combine all the ingredients.
3) Place two crusts in a baking tray. Cover each one with 3 tablespoons of filling. It is the base on which we will arrange the rolls
4) Now we make the rolls. Let’s take one crust and spread it all over with the filling. Spread the meat filling at the beginning of the crust and roll it up. We arrange the rolls in a pyramid-shaped tray. In the first row, I put four rolls, then three, two, and one from above. Between each row, generously coat the rolls with the filling.
We tuck in the crusts that we put as a base, plus we put another one on top. Cover the pie with the filling on all sides.
5) Bake the pie at 180°C (356°F) for about 40 minutes.
We serve while the pie is warm.
