Stuffing:
– 300g of leeks
– 500g of champignon mushrooms
– 2 tablespoons of oil
– 1 teaspoon of salt
– 1 teaspoon of garlic powder
– 1/2 teaspoon of oregano
– 1/3 ground pepper

Dressing:
The measure is a 200ml cup
– 1 cup of flour
– 1 cup semolina
– 1/2 cup oil
– 2 cups of carbonated mineral water
– 1 baking powder
– 1 teaspoon of salt

500g of thin crusts

Procedure:
Clean and wash the leek. We cut it into smaller cubes. Put oil in a pan and add leeks. Fry it with occasional stirring until it softens, about 10 minutes.
Meanwhile, peel the champignon mushrooms. Cut them into smaller pieces. Add to the pan with the leeks. Finally, add salt and pepper, garlic and optional oregano. If you don’t like it, feel free to leave it out. Stir to combine all the spices and simmer for another 10 minutes until all the water released by the mushrooms evaporates. Leave the filling aside to cool a little.
During this time, we make the topping for the crusts.
Mix dry ingredients, flour, semolina, salt and baking powder. Add oil and gradually add carbonated water, stirring all the time until the lumps disappear. The thickness of the topping should be like pancake batter.

We take one crust and coat it with dressing. We put the second one on top and coat it as well. Repeat the process with the third and fourth crust.
Divide the mushroom filling into three parts. Place the first third at the beginning of the crust and spread it nicely. Cover the edges so that the filling does not leak and roll up.
Arrange the finished roll in a baking sheet lined with baking paper.
Repeat the procedure with the second and third rolls.
We repeat until we have crusts, toppings and stuffing.
Spread the rest of the dressing on the rolls and bake at 180°C (356°F) for about 30 minutes.

Serve warm
