Red Currant Cake

Red Currant Cake. An extremely beautiful, tasty, juicy and refreshing cake, which is very easy to prepare even for beginners in the kitchen.

Sponge dough:
– 3 eggs
– 150g of sugar
– 100ml of milk
– 100ml of oil
– 200g of flour
– 1 baking powder
– 2 tablespoons of bread crumbs
– 1 teaspoon of vanilla
– A pinch of salt

Cheese filling:
– 200g of fresh unsalted cheese
– 2 tablespoons of powdered sugar
– 1 egg
– 1 teaspoon of vanilla

And more:
– 200g of red currants

Procedure:
Beat the eggs, sugar, vanilla and a pinch of salt until foamy. Gradually add milk and then oil. Beat with a mixer until all ingredients are well combined. Sift the flour and baking powder into the dough, then add the breadcrumbs. Mix everything together until all lumps disappear.
Pour the mixture into a baking mold with a diameter of 26 cm lined with parchment paper.
Set aside while we make the cheese filling.

Mix cheese, powdered sugar, a little vanilla and egg and beat everything into a smooth mixture.
Spoon the cheese mixture onto the already prepared biscuit dough.

Wash, dry and remove the stems from the currants. Arrange them between the cheese balls.

Bake the cake in a preheated oven at 180°C (360°F) for about 40 minutes

Decorate the baked cake with powdered sugar and the remaining currants
