Risotto with Shiitake Mushrooms

Today we are making risotto with very healthy and medicinal shiitake mushrooms.
Preparation time is about 40 minutes.

Components :
– 250g of shiitake mushrooms
– 200g of basmati rice
– 1 purple onion
– 1 bunch of green onions
– 2 cloves of garlic
– 5-6 cherry tomatoes
– 1 teaspoon of salt
– 1/2 teaspoon of thyme
– a pinch of pepper
– a couple of stalks of fresh parsley
– 2 teaspoons of butter
– 100g of Parmesan cheese
– 200ml of chicken broth
– 100ml of water
– 100ml of white wine

Preparation procedure:
Cut the onion, leek and garlic.
Wash the mushrooms, dry them and cut them into strips.
Put butter and chopped onion in a pan and fry. Add leek and then garlic. Fry for 5 minutes.
We add mushrooms and cook for another 10 minutes.
Add tomatoes, spices, rice, chicken broth and water. Cook for about 15 minutes, stirring occasionally and adding more water as needed.
At the end, add fresh parsley, white wine and Parmesan cheese. Combine well and our delicious lunch is ready.

We serve and enjoy the fullness of taste.
