Scones with Cheese and Spinach. Airy dough and tasty filling are a winning combination.

Ingredients needed for the dough:
– 250 ml of milk
– 2 spoons of sugar
– 7 g dry yeast
– 80ml of vegetable oil
– 1 egg
– 1 teaspoon of salt
– 500 – 550g of flour
Knead the dough and leave it in a warm place to rise.
Ingredients for the filling:
– 400g feta cheese (or cheese of your choice)
– 200g of blanched spinach
– Salt to taste (I don’t add it because the feta is salty enough)
Mix the cheese and chopped spinach and stir to combine
Ingredients for coating scones:
– 1 egg yolk
– 2 spoons of milk
– A teaspoon of chia seeds for sprinkling (optional)

When the dough has risen, transfer it to the work surface, knead it a little and leave it for another 20 minutes.
Now our dough is ready to work. Roll it out with a rolling pin into a circle about 1 cm thick. Cut into 8 equal triangles. Cut each triangle in the middle and on the sides.
Arrange the triangles on the baking paper in a circle. First 4 triangles, one opposite the other, and then the other 4. We line up so that we get an octagon.
Along the inner edge, arrange the cheese and spinach filling in a circle.
We close the filling by moving the triangles over the filling. First the top 4, then the other 4.
We got a nice ring from our test.
Let it rest for about 15 minutes, then spread it with egg yolk and sprinkle with chia seeds.
Bake at 200°C (392°F) for the first 15 minutes, then reduce temperature to 180°C (356°F) for another 15 minutes.
The cake got a nice golden-brown color and smelled the whole kitchen.
