Category: Bread and Dough

Ingredients needed for the dough:
– 150 ml of milk
– 150ml of yogurt
– 50ml of oil
– 1 spoon of sugar
– 1 teaspoon of salt
– 25g of fresh yeast
– 6g of baking powder
– 2 eggs
– 600 – 650g of flour

For coating:
– 1 egg yolk
– 1 spoon of milk
– Flax and sesame seeds

Foods for filling:
– 300g of cheese of your choice (I use feta)
– 100g of tomato sauce
– 1 teaspoon of oregano
– 150g of ham

Procedure:
Put sugar in lukewarm milk and crush the yeast. We wait about 10 minutes for the yeast to activate.

Pour the yeast into the mixing bowl, add oil, yogurt, and salt. Break 2 eggs and add baking powder. Add sifted flour, part by part. We mix first with a mixer, and then when we add enough flour, we knead by hand. Knead until the dough stops sticking to your hands.

Cover the dough and leave it in a warm place for about 1 hour to rise.
After 1 hour, the dough filled the bowl to the top. Place it on a floured surface and knead it a little. Divide the dough into two parts and let it rest a little longer.

During this time, we make the filling for our pastry. Mix cheese and tomato sauce, add oregano and diced ham.

Roll out one part of the dough with a rolling pin to a thickness of about 1 cm. Cut the dough into 6 equal triangles. Cut each triangle into 5 parallel cuts. We put the filling on each triangle, fold it over, and press the dough so that it does not leak. We roll up the pastry and connect the ends.

Arrange the pastry in a baking tray lined with parchment paper.
We repeat the same with the second part of the test.
Cover the pastry and leave for about 20 minutes while the oven heats up.
Mix egg yolks and milk and coat each roll, then put sesame seeds and flax over each one.

Bake in a preheated oven at 200°C (390°F) for about 20 minutes

Good appetite‼️
